Jackie Fleming’s Reuben Casserole

I talked my neighbor Jackie Fleming into sharing this recipe:

Jackie’s Reuben Casserole:

Stuff Needed:

9 x 13” Baking Dish

8oz Medium Egg Noodles

8oz Deli Corned Beef

1 can 14oz Sauerkraut with Caroway Seeds (not drained)

2 Cups Shredded Swiss Cheese

¾ Cup Thousand Island Dressing

¾ Cup Milk

1 Tablespoon Yellow Mustard

2 Slices Pumpernickle Bread, Crumbled

2-3 Tablespoons Butter, Melted

Directions:

1. Cook and drain noodles

2. Cut corned beef into bite-sized pieces

3. Combine corned beef, sauerkraut, cheese and noodles in the casserole dish

4. Combine dressing, milk, and mustard and pour over noodle mixture

Combine bread with melted butter and sprinkle on top of casserole.

Bake at 350º 45-40 minutes.

Jack’s Modified Reuben Casserole for Two:

Stuff Needed

9 x 9” Baking Dish

4oz Medium Noodles

4oz Deli Corned Beef

8oz Sauerkraut w/Carroway Seeds (not drained)

1 Cup Shredded Swiss Cheese

1/3 Cup Thousand Island Dressing

1/3 Cup Milk

1 1/2 Teaspoon Yellow Mustard

1 Slice Pumpernickle Bread

1 1/2 Tablespoon Butter Melted

Directions:

1. Cook and drain noodles

2. Cut corned beef into bite-sized pieces

3. Combine corned beef, sauerkraut, cheese and noodles in the casserole dish
